- Critical, corrected during inspection: Improper cooling of TCS food. Meatballs that were cooked 3-4 hours prior were observed cooling on the counter top and had an internal temperature of 73F. PIC discarded meatballs at time of inspection. Chicken and beef that had been cooked around 2 hours prior was also cooling at room temperature and were at 74F and 75F. Chicken and beef were placed into refrigerator to finish cooling.
- Critical, corrected during inspection: Raw shell eggs not maintained at 45° F or below. Eggs were sitting out at room temperature and had an internal temperature of around 53F Eggs were placed in to the refrigerator to be kept cold.

- Critical: White rice improperly acidified to render it non-TCS, or without a HACCP plan. Facility was keeping sushi rice at room temperature from the day prior without a HACCP plan or pH testing. PIC stated normally rice is made fresh every day and kept above 135Fin the warmer.
